This is the key advantage of titanium coating over ordinary Teflon. Titanium hardness on the Mohs scale is 6 units — comparable to hardened steel. Standard Teflon is around 2 units.
In practice this means:
- Metal spatulas — fine
- Whisks and tongs — fine
Sharp knives used with force are still best avoided. The micro-textured surface provides additional protection: even if the top points of the relief wear slightly over time, the non-stick properties are preserved because the recesses remain untouched.
