Aluminium pans entered mass kitchens in the mid-20th century — and immediately changed the approach to cooking. The lightweight metal heated up many times faster than cast iron and stainless steel, required no effort to move and was affordable. It was aluminium that turned the pan from a heavy professional piece of equipment into an everyday kitchen tool.

But aluminium had one serious drawback — softness. Scratches, deformation, reactions with acidic foods. The solution was found in titanium coating: an ultra-hard titanium-based spray protects the surface from mechanical damage and makes it chemically inert.

Today an aluminium pan with titanium coating is the best of both worlds: the speed and lightness of aluminium plus the durability and safety of titanium. The coating releases no toxins, is not afraid of metal spatulas and lasts many times longer than ordinary non-stick.

01. Do not overheat the pan when empty — aluminium heats up very quickly. Just 1–2 minutes on medium heat before cooking is enough. Overheating without oil or food shortens the lifespan of any coating, even titanium.

02. Use minimal oil or none at all — the titanium coating creates a natural non-stick effect. A drop of olive oil on a paper towel to wipe the surface is enough. This makes dishes lighter and healthier without losing flavour.

03. Store the pan separately from other cookware or use a soft cloth between pans when stacking. Despite the hardness of the titanium coating, scratches from other pans during storage are the most common cause of wear. A cloth between pans will extend the coating's lifespan several times over.
